Okay, I get it. You don’t want your students running a muck around you while sucking on sticks covered with high-fructose-corn-syrup and loudly casting spells on one another with newly sharpened pencils. Okay. You don’t want little Brian eating 30 pieces of ‘I {heart} you’ Laffy Taffy while he theatrically spins himself in circles until he pukes, I GET IT TEACHER!
I am not totally bummed that my cute hand print and candy with attached “I think you’re sweet” Valentines Day Cards are out of the question for my son’s class this year. But, it does leave me with a bit of searching for the perfect treat, but, in fact not being a “treat” itself. Damn.
But looky-looky!

So here’s a sneak peek at what we will be making this week for my son’s class for Valentines Day.
…Annnnnd, I’m pretty sure we will be suffering from neck over-extention from holding our heads back too far just to get that last bit of Pixie Stix glory while doing so… mmmm it’s soooooo delishish! Here kids, lets wash it down with some Rockstar Energy Drinks. Oh, no, no…. that extra stuff {vodka} is for mommys drink.

I’ve been a cake-baking gal for a while now. Almost everyone in my circle has had the pleasure of me baking them a cake for their special day (you’re welcome), except for one… our canine daughter Mercy-Me. Awww, poor Mercy-Me! So, I’ve decided to change that this year when her “Save Day” came around. Since we don’t know when her exact birthday is, we decided to celebrate the day we adopted her and brought her home from the death jail… AKA the pound. This year marked her 4th year with our family and I decided it was about time to bake a special cake just for her. Not the prettiest thing ever, but canine friendly. Mercy-Me ate it in a matter of minutes. I hope your special canine friend will love it too!

In a separate bowl, whisk together flour and baking soda until well blended. Set aside.
In mixing bowl, add peanut butter, applesauce, carrots, egg and oil. Mix until well blended. Add your flour and baking soda mixture and blend until well mixed and even. Batter will be thicker than a normal cake. If you think that it is too thick, add 1 tablespoon of applesauce, honey or oil at a time, but batter should be mostly solid for easier digestion for dogs. So don’t make it “runny” like a normal cake.
Bake at 350° in a greased “loaf pan”. You can use a 8×4 inch pan, but I used a 6×9 inch glass pan.
Pour batter into pan and spread evenly with spatula.
Bake for 30 minutes.
Once baked, let cake cool for a minute or two in pan. Once cooled enough, place cake on cooling rack or plate.
TIP: Do not cut or frost until cake has cooled!
Once cooled, you can cut your cake into a “bone” shape with a sharp non-serrated knife.
In a large bowl, whip up peanut butter with electric mixer. Add yams (or sweet potato) and whip again until well mixed together. Add your choice of “sweetener” to doggy taste and whip again! Place in refrigerator until chilled.
Once cake has been cooled and cut, frost away! I chose to only frost the top of my dogs cake since the frosting was a bit thick.
I whipped up 2 tablespoons of low-fat cream cheese and added pink food coloring and placed in bag. I cut the tip off the bag and wrote “Happy Save Day Mercy Me” on the cake.
Looks are not important here. Dogs don’t care what the cake looks like. The only thing that matters is the love and time you put into something special for your special friend!

Once we sang her a special version of “Happy Save Day” it was a GO! She first licked all the frosting off and then inhaled the cake in a matter of minutes. I guess she loved it, which made my day!
